How to Make Babi Guling

    Step 1
  • Clean and prepare the pig: Remove the pig's internal organs and wash it thoroughly. Pat dry with paper towels.
  • Step 2
  • Prepare the spice paste: In a food processor, combine shallots, garlic, red chili peppers, bird's eye chili peppers, turmeric powder, ginger paste, galangal paste, lemongrass, kaffir lime leaves, shrimp paste, salt, and sugar. Blend until you have a smooth paste.

  • Marinate the pig: Rub the spice paste all over the pig, inside and out. Make sure to get the paste into the crevices and cavities. Let it marinate for at least 2 hours, or preferably overnight in the refrigerator.

  • Preheat the grill or oven: Preheat your grill or oven to 350°F (175°C).
  • Step 5
  • Stuff and secure the pig: Stuff the pig's cavity with banana leaves and secure the openings with bamboo skewers. Wrap the entire pig with additional banana leaves to keep it moist during roasting.

  • Roast the pig: Place the pig on the grill or in the oven and roast it for about 3-4 hours, or until the skin is crispy and the meat is tender. Baste the pig with vegetable oil throughout the cooking process to keep it moist.

  • Serve: Once done, remove the pig from the heat, let it rest for a while, and then carve it into pieces. Serve your Babi Guling with steamed rice, sambal, and other side dishes. Enjoy!
